Hainanese Chicken Rice 海南雞飯


Originating from the Hainan province in China, Hainanese Chicken Rice features tender, juicy poached chicken and fragrant rice cooked in a flavourful chicken stock. While it's a staple in Hainan, it's also widely enjoyed across Southeast Asia, with each region adding its own unique twist to the recipe.


I'm excited to share my homemade version with you here. While it may seem complex, it's actually quite straightforward to make at home. The key lies in careful preparation. Once you have all your ingredients ready, the cooking process comes together seamlessly! I couldn't resist devouring all three chicken thighs in one sitting - the flavours were just that good! 😋

 




INGREDIENTS

- 3 chicken thighs (about 580g)

- 3g lemongrass

- A few pieces of Lime leaves (or pandan leaves if you have)

- 5 slices of ginger

- A pinch of sea salt

- 3 tbsp Shaoxing wine

- 2 tsp dashi powder

- 3 tbsp chopped spring onion

- 1 tbsp Turmeric powder

- 1 tsp Galangal paste

- 1200ml water

- Sliced cucumbers (optional)

 


METHOD

 

1. Fill a large pot with water and add spring onions, lemongrass, lime leaves, ginger slices, salt, galangal paste, dashi powder, turmeric powder, and Shaoxing wine. Stir to combine and bring to a boil over medium-high heat.

 

2. Once boiling, gently submerge the chicken thighs into the water, lifting them in and out a few times. Once the water starts bubbling, cover with a lid and simmer on the lowest heat for 8-10 minutes. Turn off the heat and let it sit covered for 30 minutes.

 

3. After 30 minutes, transfer the cooked chicken thighs to an ice bath for 10 minutes to halt the cooking process and give the skin its desired texture. Reserve the poaching liquid (chicken stock) for later use.

 

To check for doneness, insert a toothpick into the thickest part of the drumstick; if the juices run clear, it's cooked through.

 

4. Remove the chicken from the ice bath and drain well. Use a sharp knife to debone the chicken thighs.

 

5. In a rice cooker, combine jasmine rice with the reserved chicken stock (maintaining a ratio of 1 part rice to 1.25 parts liquid) and cook according to the rice cooker's instructions.

 

6. While the rice is cooking, prepare the dipping sauces.

 

7. Once the rice is ready, serve the sliced chicken alongside the cooked rice, accompanied by cucumbers (optional) and prepared dipping sauces. Enjoy your Hainan Chicken!

 


GINGER & SPRING ONION SAUCE

- 2 tbsp finely chopped ginger

- 3 tbsp finely chopped spring onion

- Salt for seasoning

- 5 tbsp hot oil

 

Combine the finely chopped ginger and spring onion in a heatproof dish. Heat the oil in a small pan until hot. Pour the hot oil over the ginger and spring onion mixture, season salt and stir well to combine.

 

CILLI SAUCE

- 1 tbsp finely chopped chilli

- 1 tbsp finely chopped garlic

- 1 tbsp finely chopped ginger

- 1 tsp salt

- 1 tbsp sugar

- 1 tbsp fresh lime juice

- 1 tbsp chicken stock with oil layer (from poaching chicken)

 

Combine the above ingredients and mix thoroughly.

 

SWEET SOY SAUCE

- 1 tbsp vegetable oil

- 1 tbsp dark soy sauce

- 1 tbsp chicken stock (from poaching chicken)

- 1 tsp sugar

 

Heat oil in a small pan over medium heat, add dark soy sauce, chicken stock, and sugar. Stir until combined.







 

Pepper Lunch Style Mushroom Fried Rice 黑胡椒菇菇炒飯


I made this Pepper Lunch Style Mushroom Fried Rice for my vegetarian day!

Pepper Lunch is a famous Japanese sizzling steak restaurant franchise, their significant pepper beef rice has become one of the most popular recipes, I also made it before and absolute love it.

This is my take on no meat version, the ingredients are pretty simple, I made an easier recipe for the sauce mixture as well, it was so good and tasted so so delicious!


INGREDIENTS

- 250g mushrooms *I use 2 types of shimeji mushrooms

- 5 baby corns, diced

- Spring onion

- Sesame seeds

- Rice

  

SAUCE

- 2 tbsp tomato sauce

- 2 tbsp vegetarian oyster sauce

- 2 tbsp soy sauce

- 1 tbsp sugar

- 2 tbsp water

 

OTHER INGREDIENTS

- 1 tbsp black pepper

- 1 tbsp slurry

 

METHOD

1. Mix all the ingredients for the sauce.

2. Heat oil in a small sauce pan over medium heat, stir in black pepper.

3. Pour the sauce in the pan, cook over low heat until everything mixed thoroughly and bubbles appear.

4. Add slurry and keep stirring until thicken, turn off the heat and set aside.

5. Heat up sufficient oil in another pan, stir fry mushrooms and baby corns over medium to high heat until browned or to your liking.

6. Put the rice in the middle, add spring onion and pour black pepper sauce.

7. Mix everything together, sprinkle more spring onions and sesame seeds as preferred, enjoy it!

And this has become my Vegetarian Day's stable! I made it another day simply with mushrooms and sweetcorn, quick, easy and absolutely satisfying to eat.



 

Natto Rice Bowl 納豆蓋飯

Have you tried Natto?

 

Natto is famous Japanese superfood, made from fermented soybeans and is often eaten for breakfast in Japan. Some people might find natto unappetizing at first glance due to its pungent smell and weird texture, it’s just like Marmite, you either love it or hate it. I remember my first time trying natto was when I had a traditional Japanese breakfast in Japan, since I have seen it a lot on many Japanese food/cooking shows, I was quite familiar with natto and just loved it on my first bite! Yes, the texture is slimy, stinky, sticky and maybe with a bit funky smell (However, strong-flavoured cheese is smellier to me.) but at the same time the taste that fermentation brings is unique, natto is also super nutritious loaded with vitamins, probiotics and rich in protein.

 

If you are interested to find out how it tastes like, you can get prepacked natto from Japanese or some Asian grocery stores. Best to eat it with a simple bowl of rice first. I love mixing natto with spring onion and raw egg, this is also a very classic mixture to enjoy natto with rice. So just being open mind to give this iconic taste a try, you probably would get addicted like me!

 

INGREDIENTS

-Steamed rice

-Store bought pack natto (thawed)

-1 egg yolk

-Finely chopped spring onions.

-Sesame seeds to garnish

 

SAUCES (Optional)

-Soy sauce

-Mustard

-Sesame oil

 

PREPARATIONS

1. Open natto package, stir in the included soy sauce and mustard, mix thoroughly with chopsticks.

2. Stir in chopped spring onions.

3. Add more sauces if you need more flavour.

4. Serve over rice with an egg yolk and more spring onions, garnish with sesame seeds.

 

 



Watermelon Onigiri 西瓜飯糰


I know summer in London is unlike any other in the world but this year…the heat was on for one week only and the autumn is coming, can you believe that? And I have been wanting to make this Watermelon Onigiri, not sure if I still have chance for summer picnic but I do need to get my hands on it, otherwise this post would be set for next summer…in 2022.

 

INGREDIENTS

-Cooked short grain rice

-Pink vinegar mixture from radish pickles

-Aonori seaweed 

-Roasted black sesame seeds

 

The ingredients are simple. I use pink vinegar mixture from my homemade radish pickles to colour the onigiri. (Add less water than usual when cooking the rice to avoid watery while mixing with the pink vinegar.) Alternatively, you can mix the rice with Mentaiko明太子(cod roe), kimchi, or salmon seasoning to give it a shade of red. Shape it in triangle and leave the bottom with white rice. (Onigiri mold just made my life easier here!) Cover the bottom part with dried seaweed and decorate some black sesame seeds on top in the end. Aren’t they just looking so lovely?

 

Hope these onigiri cuteness would bring the summer back. At least once before autumn kicks it off.

Taiwanese Three Cup Tofu 台式三杯豆腐


‘San Bei’三杯, or ‘Three Cup’ is a classic Taiwanese sauce recipe which refers to three main ingredients : Soy sauce, rice cooking wine, and sesame oil. Three Cup Sauce is like Japanese Teriyaki sauce that you can homemade and use it as go-to sauce for stir-fry dishes such as Three Cup Chicken. The sauce is sticky, savoury, aromatic with bold umami flavour.

 

When speaking of Three Cup, it usually includes the equal amounts soy sauce, rice cooking wine, and sesame oil. The ratio, however, could be tweaked slightly or deviated from the original proportions to balance the flavour and that’s what I did today for making my Three Cup Tofu! It’s fairly easy to make and the result turns out absolutely delicious. Another speedy supper you need to try.


INGREDIENTS

-400g firm tofu @cauldronfoods

-5 garlic cloves, smashed.

-7-8 pieces of sliced ginger.

-1 chilli, sliced. (Remove the seeds to reduce the heat.)⁠⁠

-Small handful of Thai basil

 

SAN BEI/THREE CUP SAUCE

-2 tbsp sesame oil

-2 tbsp soy sauce

-2 tbsp mushroom sauce/vegetarian oyster sauce

-3 tbsp cooking wine

 

METHOD

1. Mix San Bei/Three Cup sauce ingredients together until well-combined.

2. Drain and pat dry tofu with kitchen paper, then cut into thick slices.

3. Heat oil in a pan over medium high heat, sauté ginger slices until aromatic.

4. Add garlic and chilli, continue to sauté until fragrant and slightly brown, then transfer to another bowl and set aside.

5. Use the same pan to pan-fry tofu over medium heat until golden brown on both sides.

6. Pour San Bei/Three Cup sauce mixture, add sautéed ginger, garlic and chilli back, reduce the heat to a low simmer for about 5-10 minutes.⁠
7. Stir in Thai basil to finish, serve immediately over rice.

Quick & Easy Marinated Sashimi (with Korean Style Mayak Eggs Sauce) 麻藥生魚片

I’ve made Korean Style Marinated Eggs/Mayak Gyeran 마약계란 a couple of times before, it was divine and so addicting that I really wanted to make it again recently. This time, however, I would like to do something differently, no eggs…but sashimi raw fish!

Not going to lie the idea is coming from Japanese ‘Zuke-Don’. (If you’ve heard about it) When the recipe of Korean Mayak Egg requires to marinate the eggs in the fridge for at least 6 hours, THIS just needs to rest sashimi in marinade sauce for 10 minutes and that’s done. How simple, isn’t it? No cooking required.⁠⁠


If you love the alluring flavour of Mayak eggs, you have to try this as well. This is also dangerously addictive to have you craving for more.⁠⁠

INGREDIENTS⁠⁠
-Assorted sashimi.⁠⁠
-Shredded Daikon radish and lemon slices. (Optional, these are coming with sashimi box, so I soak them in the sauce as well.)⁠⁠

MARINADE SAUCE⁠⁠
-1 tbsp chopped onion⁠⁠
-1 tbsp chopped garlic⁠⁠
-1 tbsp chopped spring onion⁠⁠
-2 tbsp soy sauce⁠⁠
-1 tbsp white vinegar⁠⁠
-1 tsp sugar⁠⁠
-1 tbsp still water⁠⁠
-1 tbsp sesame oil⁠⁠
-1 tbsp white sesame seeds⁠⁠
⁠⁠
METHOD⁠⁠
1. Combine marinade sauce ingredients together and stir until everything well mixed. I use this sauce mixture to marinate 16 pieces of sashimi.⁠⁠
2. Soak sashimi, shredded Daikon radish and lemon slices (if you have) in marinade sauce for 10-15 minutes. (No more than 15 minutes.)⁠⁠
3. Enjoy it with steamed rice and don’t forget to pour the sauce over it. SO GOOD!⁠⁠

Taiwanese Soy-Stewed Pork Rice Bowl 台式控肉飯


 

Kong Rou Fan 控肉飯/Taiwanese Soy-Stewed Pork Rice Bowl is another locally loved dish that I have been craving recently. It’s very similar like Lu Rou Fan滷肉飯but Kong Rou Fan is usually cooked with large cut of pork belly that you can enjoy meaty texture with soy sauce based umami flavour. A sweet and savoury, gelatinous pork dish that would satisfy your craving. The pork is fully infused with rich flavours and the fats easily melt away when chewing. I just can’t help eating more rice than usual to extend this umami flavour and it would be also perfect to have it with some pickles and a fried sunny-side up egg!

INGREDIENTS
-350g pork belly, cut into 4cm pieces.

-1 tbsp golden caster sugar.

-1 tbsp dark muscovado sugar.

-3 garlic cloves, smashed.

-3 shallots, finely chopped.

-2 stalks spring onions, finely chopped.

-3 tbsp soy sauce.

-3 tbsp cooking wine.

-1 tsp white pepper.

-200ml water.


METHOD

1. Place pork belly chops in a non-stick pan over medium heat without adding oil, pan fry until golden on both sides.

2. Stir in caster sugar and dark muscovado sugar to brown the meat.

3. Transfer the caramelised pork belly into a pot, add garlic, shallots, spring onions, soy sauce, cooking wine, white pepper and water, bring it to a boil then simmer over the lowest heat for 1 hour. (Check constantly in case a pot boils dry.)

4. Serve with rice and enjoy with some pickles!
