French Toast 法式厚吐司


Doesn’t need complicated ingredients, French Toast is so easy to make and looks fancy on the table to brighten up the day. Basically, you can use whatever bread you like but I particularly want THICK BREAD for this. Just get my hands on a thick cut of loaf, soak it in smooth batter, and let the pan do the work.

 

Is there anything better than having this thickest ever French Toast for breakfast?

INGREDIENTS

-A thick slice of bread.

-1 large egg

-100ml whole milk

-1 tsp sugar

-1 tsp vanilla extract

-25g butter


ADDITIONS

-Strawberries

-Wafer rolls

-Icing sugar


METHOD

1. Whisk egg, milk, sugar and vanilla together.
2. Soak the bread into egg and milk mixture for 15 minutes, then turn over to soak for 15 minutes more.

3. Heat butter in a pan over medium low heat until foaming, pan-fry soaked bread until golden browned on each side.

4. Serve dusted icing sugar, wafer rolls and strawberries, or any fresh fruits of your choice if you like.

Meanwhile sharing a fun fact about French Toast I found online:

French Toast was not invented in France at all! An American man named Joseph French created this savoury sweet delight in 1724 and advertised it as ‘’French Toast’’ which was supposed to be ‘’ French’s Toast’’. But actually this tasty treat has already existed with a very long history as in the age of Roman Empire, Romans dipped bread in a milk and egg mixture before frying which was the similar recipe like what we now know as French Toast.⁠

The Cutest Easter Buuny Toast


This is probably one of the most easiest method to make Easter Bunny! The steps are so simple to follow, and I promise no bunnies harmed during the process.


First to make boiled egg bunny, you will need

-Hard-boiled egg.

-Roasted black sesame seeds.


Method

1. Use a knife to slice a small piece off one side of hard-boiled egg, the flat side would become bunny’s bottom.

2. Cut triangle on that small piece to form bunny’s ears.

3. Place the egg’s flat side down, make a slit to put the ears in.

4. Decorate with black sesame seeds as bunny’s eyes.

Ingredients

-Boiled egg bunny.

-Kelderman German style rye bread (or any of your choice) as a base.

-Avocado spread as grass fields.

 

Decorations

-Cadbury mini eggs.

-Chocolate biscuit mushrooms.

-Sugar carrots.

-Carrot top greens.

-Lemon and orange zest.

 

I actually ordered edible flowers from Waitrose but it didn’t come, so the idea to grate the outer layer of lemon and orange is a great cheaper option and it definitely brought some colourful vibes as decoration.

Easy Quiche Recipe with Sardines & Olives 沙丁魚橄欖鹹派


A quiche for weekend brunch? YES!


Just saw this easy quiche recipe from Utosh and I had almost forgotten how much I loved this savoury pie! I think quiche is a dish that I first tried to make when I was a beginner cook, it’s so easy to put everything together, just simply use ready rolled pastry sheet to save your time and add the ingredients you like. Quiche can be served hot or cold, but freshly baked one is always the best!

⁠

𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬⁠

-1 puff pastry sheet (about 200g).⁠

-5 brisling sardines.⁠

-5 olives from The Real Olive Company

-50g sweetcorn.⁠

-1 tbsp edamame beans or garden peas.⁠

⁠

𝐅𝐨𝐫 𝐭𝐡𝐞 𝐦𝐢𝐱𝐭𝐮𝐫𝐞⁠

-2 eggs⁠

-100ml milk⁠

-A pinch of black pepper.⁠

-A handful of grated cheddar.⁠

⁠

Method

1. Preheat the oven to 200°C.

2. Unroll the pastry sheet and place on a 18cm baking tin or oven safe pie dish, chill for a while and then cut off the edges of pastry.

3. Spread sweetcorn, edamame beans, and garden peas on the pastry, pour over the egg mixture.

4. Bake for 12-15 minutes, add brisling sardines, olives, and additional grated cheeses on top, keep baking in oven for a further 12-15 minutes.

Pancake Day 2021


I’ve always missed Pancake Day before but this year I particularly pinned it at schedule together with Lunar New Year so I wouldn’t forget. My first attempt was to do Jana's pancake bunnies but unfortunately failed (not easy to make the exact shape I want!), then I tried to make mini pancakes, again, not as easy as I thought. (so hard to make the mini pancake at perfect rounded size!) So I started over with the simplest method, not doing any fancy mini size or shapes, and it’s just much easier for me.


Ingredients

-180g plain flour.

-3g baking powder.

-A pinch of salt.

-2 medium eggs, beaten.

-40g sugar.

-25g vegetable oil.

-130g milk.

 

Method

-Whisk eggs and sugar in a large bowl until sugar dissolves, add oil and milk to mix thoroughly.

-Whisk flour, baking powder, salt in a separate bowl.

-Pour flour mixture into milk mixture, beat until you have smooth pancake batter. (you can add more flour or milk if the batter is too watery or too thick.)

-Rest the batter in the fridge for 30 minutes.

-When time is up, heat a non-stick frying pan with a small amount of oil over medium high heat until the pan is getting hot, then reduce to low heat.

-Drop pancake batter into the pan, when the surface starts to bubble, flip it over and continue cooking until both sides are brown.

-Repeat until batter is used up.

 

You can serve it with

-Honey or maple syrup.

-Lemon and orange zest.

-Icing sugar.

-Butter.

-Any fruits of your choice.

每年都錯過的鬆餅日今年終於有跟上了!這段期間的英國超市都會在架上特別展示做鬆餅的材料,但因為現在幾乎都網購⁠,也不太有機會去實體超市感受鬆餅日到來的氣氛,倒是今年終於很應景的也做了鬆餅(煎到第三輪才煎出我要的樣子),然後也隱隱約約覺得春天好像真的要來了呢。

Taiwanese Fan Tuan Rice Roll 台式早餐飯糰



Breakfast food in Taiwan is diverse with so many options that you can choose, from traditional ones to western fusion, there are way too many to introduce one by one. And speaking of my favourie Taiwanese breakfast, Fan Tuan飯糰, known as Rice Roll or Rice Ball, is definitely on my top 3 list. Fan Tuan is classic Taiwanese breakfast food made with glutinous sticky rice (white or purple) stuffed with fillings including You Tiao油條, Meat Floss肉鬆, and Pickles. (Sometimes with egg, different types of your choice.) In Taiwan, you can always spot small food carts selling freshly made Fan Tuan in the early morning around the neighboured street, so people can buy and eat it on the go to school or work.

 

Since I bought a box of frozen You Tiao earlier on, I’ve decided to use it making Taiwanese Fan Tuan today. Despite this You Tiao (from a Chinese brand I never know) doesn’t taste exactly the same as Taiwanese You Tiao, it still worked. Having Fan Tuan just made me feel having a great start of the day, it’s absolutely delicious and keeping me full in the morning.

 

My fillings for Fan Tuan

-You Tiao

-Pollock floss

-Takana/Pickled mustard leaves from Yutaka 

-Spring onion egg omelette.

 

Also here are my tips to cook glutinous sticky rice

-The ratio of sticky rice and water is 1:0.6.

-No need to soak in water before cooking.

I’ve used above method to steam sticky rice for many times and it’s always being cooked perfectly.

 


之前買的一盒冷凍油條,前陣子開封了兩條拿來配稀飯,今天決定再繼續用油條來做台式飯糰,我還煞有其事的找了一條全新的抹布把它套進塑膠袋,想要效仿台灣早餐店包飯糰的方式,無奈我我手勁不夠大,飯糰壓好久才成型,而且最後變得好大一團,雖然這個油條的口感不太像台灣的油條(我買的這款口感很像雙胞胎),但包了肉鬆跟酸菜的糯米飯糰吃起來還是讓人感動得想哭,再配上一杯冰豆漿,真的有瞬間回到台灣傳統早餐店的感覺。

Congee Breakfast for New Year's Day


‘𝐘𝐮𝐚𝐧 𝐃𝐚𝐧’ 元旦 is the phrase in Mandarin Chinese to call the first day of New Year. Considering the first day of the year, I always like to have myself a proper breakfast or brunch to greet the start of New Year. And ‘𝐗𝐢 𝐅𝐚𝐧’ 稀飯, or Congee in English, is a comfy food to have when sickness but also could be served for breakfast, particularly when you need handover cure the morning after New Year’s eve celebration.

 

In Taiwan, we usually have plain congee with a couple of side dishes. The ratio of rice and liquid could be altered depending on your desired consistency. Here is how I made my congee breakfast:

 

𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬: (Serving 2-3)

-Short grain rice 150g.

-Water 900g.

My ratio of rice and water is 1:6, congee becomes neither too watery nor too thick. You can also adjust the amount of water to suit your preference.

 

𝐌𝐞𝐭𝐡𝐨𝐝:

-Rinse rice 2-3 times and drain, then add 900g water at once and cook in a large pot over medium high heat. (no need to soak rice before cooking, also stir occasionally to prevent the rice from sticking to the bottom of the pot.)

-Bring to a nearly boil and reduce the heat to a low simmer, cook for 20 minutes.

-Turn off the heat and leave it for a further 10 minutes.

-Serve in a smaller ceramic pot or a bowl, enjoy with side dishes and toppings.

 

𝐌𝐲 𝐬𝐢𝐝𝐞 𝐝𝐢𝐬𝐡𝐞𝐬:

-Soft boiled egg (egg from Clarence Court)

-‘You Tiao’油條/ Fried dough sticks.

-Taiwanese pickled bamboo shoots.

-Pollock floss.

-Takana / Pickled mustard leaves from Yutaka.

-Chopped spring onions and fried onions to garnish.

-Soy sauce and sesame oil to season.

 




National English Breakfast Day : Full English Breakfast

 

Speaking of well-known British dishes, what would you think of ? I think English Breakfast, sometimes called a ‘’fry-up’’, is one of the most famous and popular British foods that most people would love. And today on December the 2nd is actually 𝐍𝐚𝐭𝐢𝐨𝐧𝐚𝐥 𝐄𝐧𝐠𝐥𝐢𝐬𝐡 𝐁𝐫𝐞𝐚𝐤𝐟𝐚𝐬𝐭 𝐃𝐚𝐲 to celebrate the heritage and tradition of this iconic British dish, so I’ve made myself a proper full English breakfast and tried to included nearly everything an English breakfast needs on the plate except black pudding. (I am totally fine with black pudding, I just didn’t get this ingredient from my online grocery shopping.)

 

Here is my full English Breakfast :

-Caramelised onion sausages from The Jolly Hog.

-Smoked streaky bacons & mushrooms from Waitrose.

-Cauliflower hash browns from Strong Roots Uk.

-Baked beans from Heinz.

-Cherry tomatoes from Sainsbury's.

-Fibre sliced loaf from Hovis.

-Egg from Clarence Court.

-Milk tea from Nittoh.

說到英國代表食物,你會想到甚麼呢?英式早餐絕對可以排在名單中的前幾名吧,我記得以往每每去住英國鄉間的B&B,最期待的就是隔天早上B&B主人現做的英式早餐;因為發現12月2日是National English Breakfast Day,於是也在家裡給自己做了一套英式早餐,我必須要承認我沒有很愛茄汁豆(血布丁跟茄汁豆讓我選的話我應該會選血布丁),但為了這個英式早餐的完整性我還是加了!即便已經買了最小罐的豆子,但現在還剩有約半罐的份量在冰箱不知道該拿它怎麼辦,可能到時煮韓式部隊鍋時再把它消滅掉吧。


倫敦周末早午餐 // Jikoni 美女主廚揮灑的多元混血料理


因為Waitrose雜誌的介紹而知道這間位於Marylebone的新餐廳,是美女主廚Ravinder Bhogal所開設的第一間餐廳。其實對於Ravinder Bhogal我並不熟知,上網查了一下,發現這位女廚師本身就擁有一個匯聚多種文化的背景(印度血統,在肯亞出生,7歲之後移居至倫敦),在投入料理界前原本是一位報導時尚與美妝的記者,因為在電視上被Gordon Ramsey譽為新世代的Fanny Cradock而一炮而紅 (Fanny Cradock是英國上個世紀最知名的電視廚師之一),所撰寫的食譜書「Cook in Boots」也十分成功,算是目前備受多方看好的新興廚師。
 
當然會讓我想試試Jikoni則還有另一個誘因,在多為男性主導的餐飲廚藝界,女性廚師本就鳳毛麟角,但通常女主廚所能賦予料理的細膩與溫柔,也多是她們能夠從中脫穎而出的原因;而倫敦本就是個揉合多元文化的大城市,匯集多國特色的料理在這兒並不稀奇,不過若是由女廚師來演繹多元異國料理的盤中風味,這倒是引起了我更多的興趣。





倫敦周末早午餐:野花咖啡 // The Wildflower Cafe (Closed)


The Wildflower Cafe, 108 Chepstow Road, London W2 5QS


The Wildflower Cafe靠近Westbourne Park Station,距離周六喧囂的Portobello Market還有好一段距離,早上11點抵達已近80%滿座,果然是最近在instagram上面很紅的一間小餐廳。

早午餐分量很充足,所以吃完會有一點膩,不過可以感覺得出這裡的食物是很原味烹調的,因為味道很淡。盛裝的小鐵鍋實用與美感兼具,讓我也好想入手一個。另外鮮花盆栽真的是裝飾好物,無需過度打理,幾朵斑斕色彩就已經讓這小空間充滿朝氣。美中不足的是竟然沒有garden。






朋友點的:「The Goodness Breakfast」。(算是有點改良式的英式早餐吧)

我點的:「Chorizo, Sweet Potato, Kale Hash and a Fried Egg」。

廚房煮:英式早餐 // My Weekend Kitchen 09 - English Breakfast



最近喜歡從instagram瀏覽倫敦美食,其中看到Parlour Kensal用圓鐵盤盛裝英式早餐的照片,很喜歡他們的擺盤方式,不過家裡沒有圓鐵盤,靈機一動想到也許可以用蛋糕烤模來依樣畫葫蘆!?



食材準備:

1.因為不是特別愛英式早餐的茄汁豆,於是直接用來自西班牙的特選小蕃茄替代。
2.烤滿福堡。
3.Quorn的素食迷你蘇格蘭炸蛋。
4.Cauldron出品的素食火腿(sausage),看內容應該是豆製類的素食火腿,感覺會比肉製火腿健康。實際吃起來沒有英式火腿那種死鹹感,口感也做得與一般火腿無異。
5.炒蛋,灑上芝麻菜(Rocket)裝飾。
6.美式咖啡與熱牛奶。
